This recipe came from our dear aunt in Michigan. This fresh and lovely salad serves on top of baked potatoes for a delicious, healthful addition to your baked potato bar.

- ½ cup cucumber chopped
- ½ cup celery chopped
- ½ cup tomato chopped
- ½ cup bell pepper chopped
- 2 tbsp onion chopped
- 2 tbsp parsley chopped
Dressing
- ⅓ cup sour cream
- ¼ cup mayonnaise
- ¼ tsp salt
- ⅛ tsp garlic powder
Chop the vegetables and add them all together.
Whisk the dressing ingredients together.
Toss the dressing and salad together.
Garnish with more parsley, if desired.
Serve on top of baked potatoes and enjoy!
