Instructions
Preheat the oven to 350°F. Line with parchment or grease a 9x9 square baking pan.
Cream the butter and sugar together until light and fluffy. Beat in the salt and vanilla. Then slowly add the flour, mixing just until there is no dry flour left. Don't over mix.
Take 2/3 of the dough and press it into the bottom of your prepared pan, making an even layer and covering the bottom of the pan.
Mix together the cream cheese, egg, berries, and lemon zest.
Spread the berry mixture on top of the crust.
Sprinkle the berries with the remaining dough, crumbling it with your fingers as you add it.
Bake for 35-40 minutes until the top is just barely starting to turn golden in spots.
Enjoy when cooled.
Notes
I have used coconut oil instead of butter, and it is so good. The crust will be softer, but you can chill it before serving it to harden the crust.
