- 1 1/2 cup oil we use coconut oil
- 3 cups sugar we use coconut sugar
- 4 eggs
- 3 cups flour
- 1 tsp baking soda
- 1/2 cup cocoa
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 3 cups zucchini grated
- 2 tsp vanilla
- 1/2 cup nuts we love pecans
Frosting
- 1/2 cup butter
- 6 Tbsp milk
- 4 Tbsp cocoa
- 4 cups powdered sugar
- 1 tsp vanilla
Cream oil and sugar for several minutes.
Add eggs one at a time.
Add dry ingredients and stir just until incorporated.
Stir in zucchini, vanilla and nuts.
Bake in a bundt pan, or cake pan at 350ยบ for 55 minutes, or until it tests done.
