Equipment

  • 2 mini muffin tins

Ingredients

  • cup rolled oats
  • 2 cups whole-wheat flour
  • cup unsweetened coconut
  • ½ cup flax seeds
  • tbsp brown sugar heaping
  • ½ cup sunflower seeds
  • ½ cup nuts chopped
  • ½ tsp salt
  • 1 cup dried fruit
  • ¼ cup honey
  • 1 cup coconut oil
  • 1 tsp baking soda
  • 2 tbsp hot water
  • ½ tsp vanilla

Instructions

  • Preheat the oven to 350℉.
  • Combine the first nine ingredients.
  • Melt the honey and oil together. Add vanilla.
  • Add the hot water and baking soda together. Then add to the oil and honey mixture.
  • Pour the oil mixture into the dry ingredients and mix well.
  • Press mixture into the mini muffin liners.
  • Bake for 10 minutes.

Notes

Have fun with this recipe. It lends itself well to additions and replacements depending on your tastes. I've supplemented rolled nine-grain cereal for rolled oats and spelt flour for the whole wheat flour. And I've added pumpkin seeds and sunflower seeds together. They're always delicious.
