Iceberg Wedges
Sage and Plow Favorites
Our dad loves a good iceberg wedge, and we've inherited not only his tastes but a great recipe too!

- 1 head iceberg lettuce
- 8 slices bacon cooked, crumbled
- 1/2 cup red onion diced fine
Bleu Cheese Dressing
- 1 1/2 cups mayonnaise
- 1 1/2 cups sour cream
- 1 Tbsp lemon juice fresh
- 6 oz bleu cheese crumbled
- chives to taste, fresh or dry
Tomato Relish
- 1 onion finely diced
- 2 garlic cloves minced
- 2 red bell peppers cored, seeded, finely diced
- 2 tomatoes halved, seeded, finely diced
- 1/4 cup fresh parley chopped
- 12 oz. ketchup
- 1 Tbsp Worcestershire sauce
- sea salt
- black pepper
Wash, core lettuce and cut into 8 slices. Top with dressing, relish, onion, and bacon.
For Dressing
Combine mayonnaise and sour cream in a mixing bowl.
Squeeze in fresh lemon juice.
Fold in bleu cheese and chives and season with salt and pepper.
