A delightful, Italian-style cake, with all the humble charm of a simple dessert.

- 5 apples
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1⅔ cup flour
- ⅔ cup sugar
- 1 pinch salt
- 1 pinch cardamom
- ¼ tsp cinnamon
- 2½ tsp baking powder
- 2 eggs
- ⅓ cup extra virgin olive oil
- ½ tsp vanilla
- 5 tbsp milk
- whipped cream for serving
Preheat the oven to 350℉ and grease a 9"x9" baking dish.
Whisk together all the dry ingredients.
Using an apple slicer, peel, core and slice the apples. Cut the slices in halves or smaller pieces if desired. Then toss them together with the lemon juice and zest.
In a separate bowl, beat together the eggs, olive oil, vanilla and milk.
Add the wet ingredients to the dry ingredients and mix together.
Fold the apples and juices into the batter.
Pour the batter into the baking dish. Sprinkle with extra sugar if desired.
Bake in the oven for 30-40 minutes, or until golden and cooked through.
Cool and enjoy this delightful cake served with whipped cream.
