Ingredients

  • 5 apples
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1⅔ cup flour
  • cup sugar
  • 1 pinch salt
  • 1 pinch cardamom
  • ¼ tsp cinnamon
  • tsp baking powder
  • 2 eggs
  • cup extra virgin olive oil
  • ½ tsp vanilla
  • 5 tbsp milk
  • whipped cream for serving

Instructions

  • Preheat the oven to 350℉ and grease a 9"x9" baking dish.
  • Whisk together all the dry ingredients.
  • Using an apple slicer, peel, core and slice the apples. Cut the slices in halves or smaller pieces if desired. Then toss them together with the lemon juice and zest.
  • In a separate bowl, beat together the eggs, olive oil, vanilla and milk.
  • Add the wet ingredients to the dry ingredients and mix together.
  • Fold the apples and juices into the batter.
  • Pour the batter into the baking dish. Sprinkle with extra sugar if desired.
  • Bake in the oven for 30-40 minutes, or until golden and cooked through.
  • Cool and enjoy this delightful cake served with whipped cream.
