Ingredients

  • 1 cup cooked grain You can use rice, quinoa, millet or couscous
  • 1 cup pineapple diced
  • 1 cup mango diced
  • ¼ cup green onions chopped
  • ¼ cup red pepper chopped
  • ¼ cup nuts macadamia, cashew, etc.
  • ¼ cup coconut shredded
  • 1 lime zest
  • 2 tbsp lime juice
  • 1 tbsp olive
  • salt to taste
  • pepper to taste

Instructions

  • Toss all the ingredients together.
  • Enjoy!!!

Notes

Quinoa is our favorite grain to use for this salad. 
Fresh fruits are the best for this, but frozen or canned can also be used.
