- 1 cup cooked grain You can use rice, quinoa, millet or couscous
- 1 cup pineapple diced
- 1 cup mango diced
- ¼ cup green onions chopped
- ¼ cup red pepper chopped
- ¼ cup nuts macadamia, cashew, etc.
- ¼ cup coconut shredded
- 1 lime zest
- 2 tbsp lime juice
- 1 tbsp olive
- salt to taste
- pepper to taste
Quinoa is our favorite grain to use for this salad.
Fresh fruits are the best for this, but frozen or canned can also be used.
