Ingredients

  • cups Black Beans
  • cups corn frozen and thawed, canned, or cooked
  • cups sweet bell peppers variety of colors
  • ½ cup red onion finely chopped
  • 1 tbsp fresh parsley minced
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • tsp ground pepper

Instructions

  • In a large bowl, combined the beans, corn, peppers, onion and parsley.
  • Combine the sour cream, mayonnaise, vinegar, and seasonings: pour over corn mixture and toss gently to coat.
  • Serve with tortilla chips.
