- 1½ cups Black Beans
- 1½ cups corn frozen and thawed, canned, or cooked
- 1¾ cups sweet bell peppers variety of colors
- ½ cup red onion finely chopped
- 1 tbsp fresh parsley minced
- ½ cup sour cream
- ¼ cup mayonnaise
- 2 tbsp red wine vinegar
- 1 tsp cumin powder
- 1 tsp chili powder
- ½ tsp salt
- ¼ tsp garlic powder
- ⅛ tsp ground pepper
In a large bowl, combined the beans, corn, peppers, onion and parsley.
Combine the sour cream, mayonnaise, vinegar, and seasonings: pour over corn mixture and toss gently to coat.
Serve with tortilla chips.
