Hummus Dip

This is our favorite way to use garbanzo beans! So delicious!

- 2 15 oz cans Chickpeas (garbanzo beans) Or WAY better---cook 1 cup dry with 3 cups water and drain!
- 1/2 cup Extra-virgin Olive Oil more as needed
- 1/2 Lemon Juiced
- 2 Tbsp Parsley roughly chopped, extra for garnish
- 2 cloves Garlic peeled
- 1 1/2 tsp Salt
- 1/2 tsp Sesame Oil
- 1 tsp Ground Cumin
- 1/4 tsp Black Pepper
- 1/4 cup Water
- 1 tsp Smoked Paprika more for Garnish
Combine all the ingredients in a blender. If too dry add a little more olive oil.
Scrape into a bowl or onto a plate, garnish with extra parsley, paprika, and a drizzle of olive oil as you like.
Serve with pita chips, vegetables, or add to sandwiches!
