Ingredients
  

  • 2 eggs
  • ¼ cup coconut oil
  • 2 Tbsp sweetener (maple syrup, honey, agave)
  • ½ tsp salt
  • 1 Tbsp vanilla
  • 1 dash cinnamon
  • 2 cups natural leavening -- sourdough starter (discard that is old works GREAT!)
  • 1 tsp baking soda
  • 1 tbsp water

Instructions
 

  • Mix eggs, coconut oil, sweetener, salt, vanilla and cinnamon all together
  • Add natural leavening and mix well.
  • Mix baking soda and water, then add to batter
  • Stir quickly, it will raise in volume and get light and bubbly
  • Bake on waffle iron
