These are the lightest, most delicious waffles--You'd never know they were made from old sourdough starter!

- 2 eggs
- ¼ cup coconut oil
- 2 Tbsp sweetener (maple syrup, honey, agave)
- ½ tsp salt
- 1 Tbsp vanilla
- 1 dash cinnamon
- 2 cups natural leavening -- sourdough starter (discard that is old works GREAT!)
- 1 tsp baking soda
- 1 tbsp water
Mix eggs, coconut oil, sweetener, salt, vanilla and cinnamon all together
Add natural leavening and mix well.
Mix baking soda and water, then add to batter
Stir quickly, it will raise in volume and get light and bubbly
Bake on waffle iron
