Our favorite sloppy joe recipe, with more yummy veggies added!

- 1 lb ground beef
- 2-3 stalks celery chopped
- 1 onion small, chopped
- 1 zucchini medium, shredded
- 1 bell pepper chopped
- 1 15-oz. can tomato sauce
- 1/2 cup ketchup
- 1/2 cup barbecue sauce (we love homemade plum bbq sauce!)
- 3 Tbsp honey
- 2 tsp dry mustard
- 2 Tbsp Worcestershire sauce
- 1 Tbsp apple cider vinegar
- salt and pepper to taste
Brown ground beef, celery, onion, and bell pepper.
Add zucchini and stir to incorporate.
Stir in remaining ingredients and simmer, covered, 20 mins or so, stirring occasionally.
If mixture appears too loose, remove the lid and let some of the moisture evaporate.
Serve on buns with cheese.
