Thrifty Eats: Budget-Friendly Sloppy Joes

Why not take a favorite and add more nutritional yumminess? These sloppy joes go further because of the addition of delicious veggies! And all that vegetable juiciness keeps this dish super moist and finger-licking good!


Poor Man Sloppy Joes

Our favorite sloppy joe recipe, with more yummy veggies added!

  • 1 lb ground beef
  • 2-3 stalks celery (chopped)
  • 1 onion (small, chopped)
  • 1 zucchini (medium, shredded)
  • 1 bell pepper (chopped)
  • 1 15-oz. can tomato sauce
  • 1/2 cup ketchup
  • 1/2 cup barbecue sauce ((we love homemade plum bbq sauce!))
  • 3 Tbsp honey
  • 2 tsp dry mustard
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp apple cider vinegar
  • salt and pepper (to taste)
  1. Brown ground beef, celery, onion, and bell pepper.

  2. Add zucchini and stir to incorporate.

  3. Stir in remaining ingredients and simmer, covered, 20 mins or so, stirring occasionally.

  4. If mixture appears too loose, remove the lid and let some of the moisture evaporate.

  5. Serve on buns with cheese.
