Apple Craisin Crunch Salad: Our Family’s Favorite Green Salad

When a little sweetness is called for as an addition to a family meal, this is the salad we go for. Handed down from another amazing sister-in-law, all of us can make this salad with our eyes closed! Well, almost! The tang of the cranberries, the sweet crunch of the apple along with the salty savory of the feta cheese and nuttiness of roasted pecans, all dressed with a zesty poppy seed dressing makes this a salad to live for!

Ingredients

  • 3 heads romaine lettuce
  • 2 apples tart is best, but use what you have
  • 1 cup dried cranberries
  • 1 cup feta cheese crumbled
  • 1 cup pecans chopped, toasted
  • 1/2 red onion chopped fine

Dressing

  • 1/3 cup apple cider vinegar
  • 1 cup olive oil
  • 1/4 cup honey or coconut sugar
  • 1 Tbsp dry mustard
  • 1 tsp salt
  • 1 1/2 Tbsp poppy seeds

Instructions

  • Toss together salad ingredients.
  • Mix dressing and add right before serving.
