Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal or corn flour
- ¼ cup sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cups whipping cream
- ¼ cup coconut oil
- ¼ cup honey
- 2 eggs slightly beaten
Instructions
- Preheat oven to 400℉ (200℃) Grease a 9" square baking pan.
- In medium bowl stir together flour, cornmeal, sugar, baking powder and salt.
- Stir in remaining ingredients just until moistened.
- Pour into baking pan and ake for 20 to 25 min. or until wooden pick inserted in center comes out clean.
Notes
There were few foods that I didn’t like as a child, but cornbread was one of them. As I grew up, I developed a taste for several of the things I didn’t like. And this cornbread is now one of my favorite breads. I crave it for its soft texture and creamy, sweet flavor.
