German Red Cabbage with Apple and Bacon

Ingredients

  • 4 slices bacon
  • 2 red onions sliced thinly
  • 1 cinnamon stick
  • 2 bay leaves
  • 4 tsp salt divided
  • 3 pounds red cabbage sliced thinly
  • 1 Granny Smith apple
  • 3 cups water
  • 1 tbsp chicken bouillon
  • 1/2 cup red wine vinegar
  • 2 tbsp sugar
  • 1/2 tsp black pepper

Instructions

  • Cook the bacon in a saucepan until done.
  • To the bacon, add the onions, cinnamon stick, bay leaf, and 1 tsp of salt. Cover and cook until the onion is soft.
  • Add the cabbage and cook until it is wilted.
  • Add the apple, water, bouillon, vinegar, sugar, the rest of the salt, and the pepper. Cover and cook until the cabbage is tender (~1 hour).
  • If still watery, take off the lid, bring to a boil, and simmer to reduce the water. Note that it is a wet dish, and should have some sauce.

Notes

This recipe hearkens back to our German ancestry. The only great grandparent I knew was my German “Oma”. I have fond memories of her in my childhood, and love my German heritage, especially the food.
