German Red Cabbage with Apple and Bacon

Ingredients
- 4 slices bacon
- 2 red onions sliced thinly
- 1 cinnamon stick
- 2 bay leaves
- 4 tsp salt divided
- 3 pounds red cabbage sliced thinly
- 1 Granny Smith apple
- 3 cups water
- 1 tbsp chicken bouillon
- 1/2 cup red wine vinegar
- 2 tbsp sugar
- 1/2 tsp black pepper
Instructions
- Cook the bacon in a saucepan until done.
- To the bacon, add the onions, cinnamon stick, bay leaf, and 1 tsp of salt. Cover and cook until the onion is soft.
- Add the cabbage and cook until it is wilted.
- Add the apple, water, bouillon, vinegar, sugar, the rest of the salt, and the pepper. Cover and cook until the cabbage is tender (~1 hour).
- If still watery, take off the lid, bring to a boil, and simmer to reduce the water. Note that it is a wet dish, and should have some sauce.
Notes
This recipe hearkens back to our German ancestry. The only great grandparent I knew was my German “Oma”. I have fond memories of her in my childhood, and love my German heritage, especially the food.
