Make Your Own Mayonnaise–with Coconut Oil!
Many years ago, we decided we would try to make our own mayonnaise– if it hadn’t been for a much too busy schedule we would have kept it up because the mayonnaise was so much better than anything store bought. The satisfaction of knowing the ingredients were clean was also a good motivator. This mayonnaise does get hard in the fridge. You can use all olive oil if you’d prefer for the same amazing results.

Ingredients
- 1 egg
- 2 egg yolks
- 1 Tbsp mustard
- 1 Tbsp lemon juice fresh
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup coconut oil melted, if solid
- 1/2 cup olive oil
Instructions
- Place the eggs, mustard, lemon juice, salt, and pepper into a food processor or blender. Blend briefly for a few seconds.
- With the processor or blender running on low speed, start adding oils slowly.
- Continue blending until oil is emulsified.
