Iceberg Wedges with Creamy Blue Cheese Dressing

It’s the Tomato Relish that makes this recipe really stand out. It adds such a wonderful dimension of flavor and is definitely worth the little bit of extra effort. This has become one of our favorite salads. Not only does it feel like a real treat to eat, it’s also quite simple to put together.

Ingredients
  

  • 1 head iceberg lettuce
  • 8 slices bacon cooked, crumbled
  • 1/2 cup red onion diced fine

Bleu Cheese Dressing

  • 1 1/2 cups mayonnaise
  • 1 1/2 cups sour cream
  • 1 Tbsp lemon juice fresh
  • 6 oz bleu cheese crumbled
  • chives to taste, fresh or dry

Tomato Relish

  • 1 onion finely diced
  • 2 garlic cloves minced
  • 2 red bell peppers cored, seeded, finely diced
  • 2 tomatoes halved, seeded, finely diced
  • 1/4 cup fresh parley chopped
  • 12 oz. ketchup
  • 1 Tbsp Worcestershire sauce
  • sea salt
  • black pepper

Instructions
 

  • Wash, core lettuce and cut into 8 slices. Top with dressing, relish, onion, and bacon.

For Dressing

  • Combine mayonnaise and sour cream in a mixing bowl.
  • Squeeze in fresh lemon juice.
  • Fold in bleu cheese and chives and season with salt and pepper.

For Tomato Relish

  • Combine ingredients.
