Authentic Tabbouleh Salad: So Mediterranean!
Because our Grandmother is Iranian, we often have this refreshing, flavor-packed salad! It’s reminiscent of Greek Salad, but heartier and very easy! Give bulgar wheat a try. . . it absorbs the flavors that surround it, and has a nutty, chewy texture that is soul satisfying!

Ingredients
- 1 Cup Bulgur Wheat
- 1 1/2 Cups Boiling Water
- 1/4 Cup Freshly Squeezed Lemon Juice 2 lemons
- 1/4 Cup Olive Oil
- 3 1/2 tsp salt divided
- 1 Cup Scallions, minced 1 bunch whites and greens
- 1 Cup Mint Leaves, Fresh Chopped
- 1 Cup Flat-leaf Parsley, Fresh Chopped
- 1 Cucumber unpeeled, diced
- 2 Cups Cherry Tomatoes cut in half
- 1 tsp Pepper
Instructions
- Place the bulgur in a large bowl, pour in the boiling water and add the lemon juice olive oil, and 1 1/2 tsp. salt. Stir, then allow to stand at room temperature for about 1 hour.
- Add the scallions mint, parsley cucumber, tomatoes, 2 tsp. salt, and the pepper. Mix well. Season to taste and serve, or cover and refrigerate. The flavor will improve it you allow it to sit for a few hours.
