Chocolate Zucchini Cake

This recipe came from a dear friend when we lived in Hudson, Wisconsin! We've made it over the years and always remember our good times, there!

  • 1 1/2 cup oil (we use coconut oil)
  • 3 cups sugar (we use coconut sugar)
  • 4 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 cup cocoa
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3 cups zucchini (grated)
  • 2 tsp vanilla
  • 1/2 cup nuts (we love pecans)

Frosting

  • 1/2 cup butter
  • 6 Tbsp milk
  • 4 Tbsp cocoa
  • 4 cups powdered sugar
  • 1 tsp vanilla
  1. Cream oil and sugar for several minutes.

  2. Add eggs one at a time.

  3. Add dry ingredients and stir just until incorporated.

  4. Stir in zucchini, vanilla and nuts.

  5. Bake in a bundt pan, or cake pan at 350º for 55 minutes, or until it tests done.

Frosting

  1. Bring butter, milk, and cocoa to a boil, then add powdered sugar and vanilla.

  2. Spread on cooled cake.
