Chocolate Zucchini Cake
Chocolate Zucchini Cake
This recipe came from a dear friend when we lived in Hudson, Wisconsin! We've made it over the years and always remember our good times, there!
- 1 1/2 cup oil (we use coconut oil)
- 3 cups sugar (we use coconut sugar)
- 4 eggs
- 3 cups flour
- 1 tsp baking soda
- 1/2 cup cocoa
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 3 cups zucchini (grated)
- 2 tsp vanilla
- 1/2 cup nuts (we love pecans)
Frosting
- 1/2 cup butter
- 6 Tbsp milk
- 4 Tbsp cocoa
- 4 cups powdered sugar
- 1 tsp vanilla
Cream oil and sugar for several minutes.
Add eggs one at a time.
Add dry ingredients and stir just until incorporated.
Stir in zucchini, vanilla and nuts.
Bake in a bundt pan, or cake pan at 350º for 55 minutes, or until it tests done.
Frosting
Bring butter, milk, and cocoa to a boil, then add powdered sugar and vanilla.
Spread on cooled cake.
