Spiced Baked Oatmeal

We made this dish for our New Year's breakfast and served it with whipped cream and fresh blueberries. Such a happy way to start out a new year!

Ingredients
  

  • ½ cup butter melted
  • 2 cups oatmeal
  • ¾ cup granulated sugar
  • ¾ cup whole milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 egg

Instructions
 

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan.
  • Combine the oats and sugar in a medium bowl. Then pour in the milk and vanilla.
  • Add the cinnamon, nutmeg, salt and baking powder.
  • Add the melted butter and the egg.
  • Stir it all together. Spread the mixture into the prepared pan.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm.
  • Serve with whipped cream and berries. (Blueberries are divine with this dish.)
