Ingredients
- 5 apples
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1⅔ cup flour
- ⅔ cup sugar
- 1 pinch salt
- 1 pinch cardamom
- ¼ tsp cinnamon
- 2½ tsp baking powder
- 2 eggs
- ⅓ cup extra virgin olive oil
- ½ tsp vanilla
- 5 tbsp milk
- whipped cream for serving
Instructions
- Preheat the oven to 350℉ and grease a 9"x9" baking dish.
- Whisk together all the dry ingredients.
- Using an apple slicer, peel, core and slice the apples. Cut the slices in halves or smaller pieces if desired. Then toss them together with the lemon juice and zest.
- In a separate bowl, beat together the eggs, olive oil, vanilla and milk.
- Add the wet ingredients to the dry ingredients and mix together.
- Fold the apples and juices into the batter.
- Pour the batter into the baking dish. Sprinkle with extra sugar if desired.
- Bake in the oven for 30-40 minutes, or until golden and cooked through.
- Cool and enjoy this delightful cake served with whipped cream.
