Daren’s classes are fast becoming a popular series, attended by people well-seasoned in freeze drying as well as by the eager newbie. Daren’s easy and engaging personality make for an enjoyable hour of gleaning answers to the questions you come with, as well as the questions you didn’t know you had. - “Size consistency equals success.” Daren reiterated this point, emphasizing that foods should be cut to roughly the same size for the best drying results.
- Another point he made multiple times is that pre-freezing, while not necessary, is really helpful for drastically shortening the drying process.
- Foods with a high sugar content and a high water content are hard to freeze dry, as those sugar and water bonds are hard to break. But there are ways around that barrier. For instance, grilling pineapple before freeze drying helps to break down those bonds. Plus, you get the lovely grilled flavor!
