Iceberg Wedges with Creamy Blue Cheese Dressing
It’s the Tomato Relish that makes this recipe really stand out. It adds such a wonderful dimension of flavor and is definitely worth the little bit of extra effort. This has become one of our favorite salads. Not only does it feel like a real treat to eat, it’s also quite simple to put together.

Ingredients
- 1 head iceberg lettuce
- 8 slices bacon cooked, crumbled
- 1/2 cup red onion diced fine
Bleu Cheese Dressing
- 1 1/2 cups mayonnaise
- 1 1/2 cups sour cream
- 1 Tbsp lemon juice fresh
- 6 oz bleu cheese crumbled
- chives to taste, fresh or dry
Tomato Relish
- 1 onion finely diced
- 2 garlic cloves minced
- 2 red bell peppers cored, seeded, finely diced
- 2 tomatoes halved, seeded, finely diced
- 1/4 cup fresh parley chopped
- 12 oz. ketchup
- 1 Tbsp Worcestershire sauce
- sea salt
- black pepper
Instructions
- Wash, core lettuce and cut into 8 slices. Top with dressing, relish, onion, and bacon.
For Dressing
- Combine mayonnaise and sour cream in a mixing bowl.
- Squeeze in fresh lemon juice.
- Fold in bleu cheese and chives and season with salt and pepper.
For Tomato Relish
- Combine ingredients.
