Poor Man Sloppy Joes

Ingredients
  

  • 1 lb ground beef
  • 2-3 stalks celery chopped
  • 1 onion small, chopped
  • 1 zucchini medium, shredded
  • 1 bell pepper chopped
  • 1 15-oz. can tomato sauce
  • 1/2 cup ketchup
  • 1/2 cup barbecue sauce (we love homemade plum bbq sauce!)
  • 3 Tbsp honey
  • 2 tsp dry mustard
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp apple cider vinegar
  • salt and pepper to taste

Instructions
 

  • Brown ground beef, celery, onion, and bell pepper.
  • Add zucchini and stir to incorporate.
  • Stir in remaining ingredients and simmer, covered, 20 mins or so, stirring occasionally.
  • If mixture appears too loose, remove the lid and let some of the moisture evaporate.
  • Serve on buns with cheese.
