Ingredients
- 2 eggs
- ¼ cup coconut oil
- 2 Tbsp sweetener (maple syrup, honey, agave)
- ½ tsp salt
- 1 Tbsp vanilla
- 1 dash cinnamon
- 2 cups natural leavening — sourdough starter (discard that is old works GREAT!)
- 1 tsp baking soda
- 1 tbsp water
Instructions
- Mix eggs, coconut oil, sweetener, salt, vanilla and cinnamon all together
- Add natural leavening and mix well.
- Mix baking soda and water, then add to batter
- Stir quickly, it will raise in volume and get light and bubbly
- Bake on waffle iron
