This recipe came from our dear aunt in Michigan. This fresh and lovely salad serves on top of baked potatoes for a delicious, healthful addition to your baked potato bar.

Ingredients

  • ½ cup cucumber chopped
  • ½ cup celery chopped
  • ½ cup tomato chopped
  • ½ cup bell pepper chopped
  • 2 tbsp onion chopped
  • 2 tbsp parsley chopped

Dressing

  • cup sour cream
  • ¼ cup mayonnaise
  • ¼ tsp salt
  • tsp garlic powder

Instructions

  • Chop the vegetables and add them all together.
  • Whisk the dressing ingredients together.
  • Toss the dressing and salad together.
  • Garnish with more parsley, if desired.
  • Serve on top of baked potatoes and enjoy!
