- 2 mini muffin tins
Ingredients
- 1½ cup rolled oats
- 2 cups whole-wheat flour
- 1½ cup unsweetened coconut
- ½ cup flax seeds
- 1½ tbsp brown sugar heaping
- ½ cup sunflower seeds
- ½ cup nuts chopped
- ½ tsp salt
- 1 cup dried fruit
- ¼ cup honey
- 1 cup coconut oil
- 1 tsp baking soda
- 2 tbsp hot water
- ½ tsp vanilla
Instructions
- Preheat the oven to 350℉.
- Combine the first nine ingredients.
- Melt the honey and oil together. Add vanilla.
- Add the hot water and baking soda together. Then add to the oil and honey mixture.
- Pour the oil mixture into the dry ingredients and mix well.
- Press mixture into the mini muffin liners.
- Bake for 10 minutes.
Notes
Have fun with this recipe. It lends itself well to additions and replacements depending on your tastes. I’ve supplemented rolled nine-grain cereal for rolled oats and spelt flour for the whole wheat flour. And I’ve added pumpkin seeds and sunflower seeds together. They’re always delicious.
